How to store yeast to keep it active

Unfortunately for occassional bakers, fresh yeast just doesn't stay active for very long, sometimes only a few weeks with good fresh yeast. But there is a way to keep your yeast active for up to a year. Simply seal it in an airtight container and place it in your freezer.

This handy chart tells you how long and how to use it.

Yeast Type Stays fresh for To use
Compressed fresh Six months Defrost
Active dry One year Use direct from freezer
Instant yeast One year Use direct from freezer
