Vegetarian “Tuna” Salad Sandwiches

This recipe reminds many people of traditional tuna salad sandwiches, but instead of tuna, it uses healthy garbanzo beans instead.

1 19-oz can garbanzo beans, drained and mashed
2 tbsp mayonnaise
2 tsp spicy brown or Dijon mustard
1 tbsp relish
2 green onions, chopped
1 tbsp onion, chopped
salt and pepper to taste.

In a medium bowl combine mashed beans, mayo, mustard, relish, green onions and onions. Combine well. Add salt and pepper to taste (optional). Use in a sandwich as you would tuna salad or chicken salad.

If your kids get turned off by “healthy” things like beans, don’t tell them before hand that it is beans!
