Low Fat Marinara Sauce

2 28-oz cans low sodium whole tomatoes
1 onion, chopped
2 carrots, diced
1 clove garlic, minced
2 tbsp vegetable oil
1 tbsp brown sugar
1/2 tsp salt

Using a blender or food processor, blend tomatoes until pureed. In a skillet, saute carrot, onions and garlic until softened. Add all ingredients into slow cooker, cover and cook on low for 6-8 hours. Stir and serve over pasta noodles. If you prefer thicker marinara, remove lid and cook on high for up to one hour.
